Open Pear and Cottage Cheese Sandwich Ingredients 2 cups water 1 tablespoon brown sugar 1 piece star anise 1/4 piece cinnamon stick 1 tablespoon sliced fresh ginger 1 teaspoon lemon zest 1 sliced pear 2 slices Cero Cero Bimbo bread (lightly toasted, fat-free) 4 tablespoons cottage cheese 2 tablespoons honey 2 teaspoons dried cranberries 2 teaspoons sliced almonds For the pears: To make the sandwich: In a saucepan, heat the water and add brown sugar, star anise, a cinnamon stick, lemon zest, and fresh ginger. Boil over medium heat until light syrup. Add the pear slices and cook for 6 minutes or until the pears are soft. Remove the slices from the syrup and set aside. Spread a spoonful of cottage cheese on a slice of Cero Cero Bimbo Bread and place the pear slices (equivalent to half a piece). Drizzle with a tablespoon of honey and decorate with blueberries and almonds. Repeat for another toast.
